Ginger Sesame Turkey Meatballs

    Heat the oven to 425°F and line a rimmed sheet pan with parchment.

    Gently combine the turkey, panko, egg, ginger, half the scallions, and 1 tablespoon soy sauce. Shape into 16 meatballs.

    Bake until browned and cooked through to 165°F, 14 to 16 minutes.

    Whisk the remaining soy sauce, honey, vinegar, sesame oil, cornstarch, and ¼ cup water in a skillet. Simmer over medium heat until glossy, 2 minutes.

    Add the meatballs and turn to coat. Finish with the remaining scallions and serve with rice and cucumbers.

GLADLY NOTE

Freeze the baked, unglazed meatballs for up to two months. Reheat them in the sauce straight from frozen with an extra splash of water.
